Brassica Stir Fry

Brassica Dinner Recipe – Simple Broccoli, Cauliflour, Romanesca, Red Cabbage Stir Fry Recipe

This is a simple from scratch stir fry recipe based on what was ripe in the refrigerator.

 

Ingredients

  • 1 Cup Brown Rice
  • 1 – 2 stalks of broccoli
  • 1/4 to 1/2 head of cauliflor
  • 1/2 to 1/4 romanesca
  • 1 or 2 slices off a red cabbage
  • A few nuts (Cashews)
  • Seeds (Pumpkin seeds)
  • 2 – 4 Tbs Cocanut oil
  • 1 – 2 pieces shredded ginger (1 to 2 inches in size)

 

Sauce

  • 1  Tbs Sesame oil
  • 1 – 2 Tbs Apple cider Vinegar
  • 3 – 4 cloves garlic
  • 1 Lime (juice squeezed)
  • 1 – 2 Tbs Honey
  • 1 – 2 Tbs Miso

Cook rice in rice cooker or separate pan.

Chop and saute all veggies while rice is cooking in coconut oil at medium heat. After 10 minutes or so of sauteing, add nuts and seeds, saute another 10 to 15 minutes until veggies are cooked to your liking. Reduce heat to low until rice is done cooking. Make sauce by mixing all ingredients in a separate dish / container. Once rice is done cooking, add rice to saute pan, and add sauce, saute for a minute longer, remove from heat and server.

Top with avocado and enjoy!
