Simple Vegan Pizza from Scratch

Here is a simple recipe for making a veggie pizza from scratch in about a half hour.  This recipe includes making the crust, sauce and preparing the toppings. The pizza in this recipe is vegan but it would also work fine with cheese. It may need to be cooked slightly longer for cheese to melt.

Ingredients for the crust

  • 1 and 1/2 cup – Whole wheat flour (or white flour or a mix would work as well)
  • 2 tsp – Baking powder (if available)
  • 1/2 to 1 tsp – Sea salt
  • 2 Tbsp – Olive oil
  • 1/2 to 3/4 cup – Water

Ingredients for the sauce

  • 1/2 of a 6 oz can / jar of Tomato paste
  • 1/4 cup – Water
  • 1 tsp – Basil or any other spices, Oregano or Thyme work well too

Toppings

Any veggies on hand will work. Below are the veggies used on this pizza:

  • 1/2 Onion
  • 1/2 Zucchini
  • 1/2 Carrot
  • 4 or 5 Mushrooms
  • 2 or 3 cloves of Garlic
  • 1 medium Tomato
  • Red pepper flakes

Directions

Overview

Preheat oven to ~400 degrees

Starting with the crust, put the dry ingredients into a food processor, pulse them. Add the oil. Then add water 1/4 cup at a time processing each 1/4 cup until the dough starts form a ball. So basically add 1/4 cup of water, process a bit, add another 1/4 cup of water, process a bit and if the dough is sticking together then it is ready. If it is still crumby add a little more water, process and repeat until the dough is sticking together but not too sticky. Then roll out the dough and cook for 10 minutes.

While crust is cooking start sauteing the veggies. After 10 minutes take the crust out of the oven. Mix up the ingredients for the sauce and spread it on the crust. Once the veggies are sauted to your desired tenderness place them on the crust. Put pizza back into over for another 10 minutes and it is done!

Mix dry ingredients in food processor

Add oil and 1/4 water

Mix until dough forms a ball adding 1/4 cup then another 1/8th to 1/4th cup of water as needed

Place dough ball on floured pizza pan / stone and roll out into a crust

Roll dough into pizza crust

Cook crust for 10 minutes and remove from oven it may bubble up a bit

Saute veggies while crust is cooking for the first 10 minutes, start with onions, carrots, garlic and zucchini

Add mushrooms

Add tomato slices

Mix tomato paste, water and spices for sauce

Spread sauce on pizza crust

Put veggies on pizza crust

Cook for 10 minutes more and remove from oven

Cut pizza and serve, add red pepper flakes
