Lentils with Steamed Brussels Sprouts and Beets

This is an extremely simple and healthy recipe. The basic overview is: Cook lentils and steam the Beets and Brussels Sprouts over lentils while they are cooking. Once cooked add White Balsamic Vinegar, Sesame Seeds and serve.

  • 1/2 Cup of Green Lentils
  • 3 Cups of water
  • 1 tbs Olive
  • 1 tsp Salt
  • ~1 tsp Pepper
  • ~1 tsp Thyme
  • 2 to 4 Tbs White Balsamic Vinegar
  • Sesame Seeds

Being cooking lentils. Add the Olive Oil, Salt, Pepper and Thyme. I’m using a Miracle rice cooker but this could also be done on a stove with a steaming basket over the lentils. Some balsamic vinegar can be added to the lentils while they are cooking.

    Lentils are also commonly used in Ethiopia in a stew-like dish called kik, or kik wot, one of the dishes people eat with Ethiopia’s national food, injera flat bread. Yellow lentils are used to make a nonspicy stew, which is one of the first solid foods Ethiopian women feed their babies.*”^;
