Simple Scrambled Tofu and Kale with Yukon Gold Fries

This tofu scramble recipe is simple and delicious. Yukon Gold baked potato fries were made in place of sweet potato. (Slice potatoes into ~1” cubes or pieces, oil, salt, pepper and rosemary and then bake at 400 for 20 minutes, stir them and bake another 400).

While the potatoes are on their second 20 minute round of cooking, begin sauteing onions, garlic, sliced green pepper. jalepennos and any other veggies, add tofu, spices and kale, saute a bit longer and enjoy!
