This is a great recipe for a simple, quick dinner.
Cook rice however you prefer. While the rice is cooking, saute onions, peppers and any other veggies. Add additional veggies (yams / sweet potatoes or whatever is on hand…) Add curry spices, saute a little longer. Add coconut milk, bring to a boil and then reduce heat to simmer for 15 minutes or until veggies are cooked to your liking. Serve over rice!
